My husband and I each have a will but would like to make some changes in it; however, we would prefer to avoid what we perceive a high fee. Would a document be legally binding if my husband and I recorded our wishes, had it witnessed, and notarized?

Who knows? Without reviewing your "wishes," there is no way to give you an opinion if it would be effective, or if it would accomplish what you hope to accomplish. You might try talking to other attorneys. Fees can vary widely.
